Property tax included in loan?

Hello, we are purchasing a home with an FHA loan and we have the taxes rolled in with the loan and we have to pay every month. Are there separate taxes that I have to pay aside from what is rolled into the loan? The loan is for 120,000 dollars but how would they know how much tax to take out if the home is on the books for a higher amount since it last sold for 400k ?
